BioTechUSA Sponge Cake Baking Mix is a gluten and lactose-free baking mix which can be used to make delicious homemade sponge cakes. The basic ingredients of the baking mix are rice flour and oat flour, with added bamboo fibre for extra fibre content. For extra protein, it contains hydrolysed protein and its delightfully sweet flavour comes from the added erythritol, which results in a product that is not only lactose and gluten-free, but also has no added sugar.

The ready-to-eat product only meets the claims (gluten-free, lactose-free, source of fibre, with no added sugar) if the topping/filling also meets these claims.

Recommended use: Ingredients for one sponge cake: 200 g baking mix, 50 ml water, 3 eggs size M, pinch of salt. Separate the eggs, add a pinch of salt to the egg whites, then whip them with a whisk or a mixer, blend the yolk with 50 ml of water. Add half of the baking mix to the yolk, then carefully add half of the whipped egg whites, making sure not to break the foam. Next, add the other half of the baking mix, then finally add the remaining egg white foam. Pour the dough into a 20 cm cake form lined with baking paper, or into a silicon form, then bake in a preheated oven at 180°C (or 150°C if using a convection oven) for approx. 35-45 minutes.
