Xanthan Gum - a substance belonging to the group of polysaccharides, a natural compound of microbial origin, which is a rich source of dietary fiber. Xanthan gum, sometimes also called xanthan, is formed during the fermentation of sugars due to the presence of bacteria belonging to the species Xanthomonas campestris, which naturally occur on the leaves of cruciferous vegetables. Xanthan gum is made up of glucose, mannose and glucuronic acid. It is a highly water-soluble compound that is used as a thickener in food, incl. porridge, syrups, high-protein ice cream, sauces, cocktails or baked goods, as well as an important ingredient in the production of gluten-free products. Xanthan gum is used as a food additive abbreviated as E415.
